This is an advanced class that will focus on going in-depth to chocolate making. Starting with grading/culling the beans, roasting, crushing, winnowing, melanging (grinding), tempering and packaging. This will be a full-day class (6+ hours) and includes a light lunch and beverages. As well as a history of the bean, current growing practices, difficulties of growing and supporting the local farmer. Plus a tasting throughout the day as we discover the qualities of a region and how one bean of cocoa can taste vastly different from another simply based on terroir. You will walk away with several bars of your choice. This is chocolate making NOT bonbons or truffles or ganache. We can certainly discuss those things but bean to bar is the focus. Chocolate making, not chocolatier.
Other things to note
Parking is an issue, the library is only two houses down, park there if nothing else is available. The class will start on time. Please respect the learning environment and arrive early rather than late. Always ask questions. This is a very open environment. 6ppl max per class. Arrive breakfasted.

I have been passionate about dark chocolate the moment I realized there was something better than Hershey's. And down the rabbit hole, I went. Since then (about 25 years ago) I've been tasting, traveling, collecting and experiencing new chocolates, chocolate makers, books, movies, etc. About two years ago I realized I could do this for myself and started down another rabbit hole of education and discovering what I needed to do to mimic some of my favorite chocolate makers. Not to be confused with a chocolatier, one who makes glorious goodies with chocolate like bonbons, truffles, turtles and all the other amazing things I simply want to make chocolate from a single origin and create the best dark chocolate bar I can. Recently I launched my bean to bar craft chocolate making company called "Pollinator Chocolate".
